Fortune Cupcakes



I am sorry for procrastinating, but I did have a lot of things I had to do before I could actually write in my blog.

Anyway, this week for our mutual activity we made sort of like fortune cupcakes  for camp. I have wrote the recipe below just in case you might have wanted  to make the 
Mint Chocolate Chip Cupcakes. So, the fortune cupcakes are yes very much like fortune cookies, but they are cupcakes. All of the girls wrote super nice things that might happen in the girls future on a piece of paper and gave them to a leader. The leader then rapped that piece of paper in tinfoil then placed it in the core of the cupcake and put it in the oven. When it came time for us to leave we practiced our camp song which I have provided a website below just in case this one doesn't work. :-)

Mint chocolate chip cupcakes

Mint chocolate chip cupcakes

Yield: 24 cupcakes             Prep time: 20 minutes                 Cook time: 18-23 minutes


INGREDIENTS 
For the cupcakes 


1 (18.25 ounce) package devil's food cake mix
1 (3.9 ounce) package instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs, lightly beaten
2 teaspoons pure vanilla extract
1/2 cup warm water
1 1/2 cups Andes Crème de Menthe baking chips


For the Frosting

4 sticks (2 cups) unsalted butter, room temperature
1.5 pounds (28 ounces) confectioners' sugar, sifted
2 teaspoons pure vanilla extract
3-4 tablespoons heavy cream
green gel dye
1/4 teaspoon pure peppermint extract
2 ounces semi sweet chocolate, melted and cooled
2 tablespoons unsweetened cocoa powder
mini chocolate chips


DIRECTIONS

1. Preheat oven to 350°F. Line muffin tin with paper liners or spray with non-stick cooking spray.

2. In the bowl of a stand mixer or a large bowl with a hand mixer, add the cake and pudding mixes, sour cream, oil, eggs, vanilla and water. Mix on medium speed for about 2 minutes until all ingredients are well combined and the batter is smooth. Stir in the Andes Crème de Menthe baking chips.

3. Using a large scoop distribute the batter between 24 muffin wells; about 3 tablespoons of batter per well.

4. Bake in preheated oven for 18-23 minutes or until the tops of the cakes spring back when lightly touched. Allow cupcakes to cool inside muffin tins for about 10 minutes.

5. Remove cupcakes from muffin tins and allow to fully cool on a wire rack. Once cupcakes are cool, prepare your frosting.


FOR THE FROSTING 

1. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed for about 5 minutes.

2.Turn the mixture down to low speed and gradually add in the confectioners' sugar until it is completely incorporated. Add in vanilla and heavy cream. Turn the mixer back up to medium-high speed and beat the mixture for about 3-4 minutes or until light and fluffy.

4. Remove half of the frosting from the mixer bowl and set aside. Add a tiny amount of green gel dye to the remaining frosting (I used Wilton Leaf Green). Turn the mixer on and fully incorporate the dye. Slowly add more dye until you achieve a nice minty green color. Stir in peppermint extract.

5. Remove the mint frosting from the mixing bowl and set aside. Add the other half of the frosting back into the bowl of your stand mixer. Add in the cooled, melted chocolate and cocoa powder. Mix until fully incorporated.

6. For the two-toned effect, I used this method from GoodLife Eats. You can also carefully layer the two colors into the piping bag, but I find Katie's method to be much easier and cleaner.

7. Pipe the frosting onto the cooled cupcakes and garnish with mini chocolate chips.

P-Party (Personal Progress Party)


So last Wednesday the Mia Maids had a P-Party, and at a P-Party you must you must wear as many things you can think of that start with a "P." So, what I did was get my purple jeans, and over those jeans I wore three purple and pink socks on each leg. Over my pants I wore my pink zebra pajamas. Up top I wore a shirt with big purple flowers, and over that I wore a solid pink shirt, a big pink belt, four pink bracelets and to top it off I wore my purple boots. I was making up for my very first Beehive group activity where I wore probably only one thing that was pink. Anyway, enough about what I wore, lets talk about the activity. The different foods we ate were pizza, popcorn, sour patch kids, pineapple juice, and more. When we weren't socializing we were do our personal progress, and when we were done we went home; it was a lot more fun than it sounds though.

Cookies and Camp

Sorry that took a while, anyway...

After it had lightly snowed, Sister Stacey texted everybody to tell them that our once at the park activity, was now at her house. She also asked me the Sunday before that day, Wednesday, to make some cookies for everybody, other girls, and leaders were going to bring other homemade goods. When  it came time my sister and I were out the door. Sister Kasper, as I will so call her, offered to take us, but I kindly refused and said, "No thank you I have this to ride." (My wave-board) When I almost reach the park I realized that I forgot something, my cookies. I raced home and grab my cookies and ran out the door this time grabbing my longboard instead of my wave-board and raced down to the park. Before I reach the park I saw girls going into sister Stacey's house. I then decided to switch my destination from the park to Sister Stacy's house. When I walked up my longboard to the porch brother Stacy told me to just walk it in and go downstairs. I put my cookies on the counter while everybody was looking at me and just walked to my friend who were standing next to the wall. They just smiled at me and went back to listening to the instructions. After we got our food we sort of gathered in a circle, and well, just talked. Our leaders started to hand out Twizzlers (licorice) to pull apart. We learned three different ways to tie a knot for camp, plus we got to take a fun test also on camp which if one were to get the answer right they got a prize, which may be helpful for camp. When everything was cleaned up my sister and I went home
